Spinach Patties

Ingredients:

  • 3 tablespoons vegetable oil
  • 1 large onion (chopped)
  • (2) 10 ounce packages chopped frozen spinach
  • 3/4 cup Manischewitz® Matzo Meal
  • 4 large eggs
  • Salt
  • Pepper

Preparation:

Thaw spinach and squeeze out water. Heat oil in a large skillet and sauté onions until soft and translucent (5-10 minutes). Remove from heat and add spinach, matzo meal, beaten eggs, salt and pepper to taste. Stir together, remove the mixture to a mixing bowl and mix well. Spray a 10" stainless steel skillet with cooking spray. Heat about 1/4" in a skillet. Shape spinach mixture into 3" patties, 1" wide and 1/2" thick. Fry in batches until golden brown, turning once. Drain on paper towels.
