Zesty Lemon Chicken Salad Matzo Hors D'Oeuvres

 


Leftover chicken nuggets or roasted chicken, chopped into small bite size chunks
1 cup shredded cabbage
1 cup shredded carrots
1/4 cup chopped celery
1 red pepper, diced
2 tablespoons lemon juice
1/4 cup mayonnaise
1/4 teaspoon sugar or 1 packet Splenda®
Manischewitz® Matzo (broken into pieces) or Matzo Crackers

In a bowl mix all your ingredients except for matzo crackers. Spoon chicken salad mixture onto matzo crackers. Sprinkle with fresh chives or cut parsley and serve.
