Three Mushroom Pilaf

Serves 4 to 6


6 tablespoons margarine
2 cups Manischewitz® Matzo Farfel
2 beaten eggs
3/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1/2 cup (or more) Manischewitz® Clear Chicken Consomme
1 cup sliced button mushrooms
1 cup sliced shitake mushrooms (no stems)
1 cup sliced Portobello mushrooms cut to match size of other mushrooms
1 large onion diced
1/4 cup chopped fresh parsley

Heat large skillet on stove. Melt margarine and sauté onions till transparent. Add mushrooms and continue to sauté till tender. Remove from pan and set aside. Heat farfel and beaten eggs. Coat farfel & stir fast to form separate pieces, dry and toast lightly. Toss in mushrooms, onions and sauté. Add chicken to broth to desired moistness. Stir in parsley and pepper to taste.
