Falafel Chicken Bundles

1 envelope Manischewitz® Falafel Mix
2 tablespoons olive oil
1 box Manischewitz® Roasters for Chicken
8 boneless, skinless chicken breast halves
4 jarred, whole fire roasted red peppers drained
3 garlic cloves
1/3 cup cilantro leaves, washed and dried
1 tablespoon extra virgin garlic olive oil
Salt
Pepper
Water

 

Pre-heat oven to 375 degrees F. Spray a 9 x13 baking pan or casserole with non-stick cooking spray, set aside. In a small mixing bowl, combine Manischewitz® Falafel Mix, 1/2 tablespoon extra virgin olive oil and 1/2 cup warm water. Let sit for 10 minutes. Pour Roasters for Chicken Mix into a shallow bowl or plate, set aside. Cut excess fat off chicken breasts. With a mallet (or heavy can wrapped in plastic wrap), pound chicken breasts to 1/4" thickness.* Place a tablespoonful of falafel mixture in center of each chicken breast. Roll up chicken around the filling, tucking under sides. Brush chicken bundles with remaining extra-virgin olive oil. Roll chicken bundles in Roasters for Chicken Mix and place in prepared baking pan. Bake uncovered for 30-40 minutes, until chicken is no longer pink when sliced. Serve each chicken bundle with a generous spoonful of Fire Roasted Pepper Salsa. Pass additional salsa in a small bowl.

For Fire Roasted Pepper Salsa:
Place fire roasted peppers, garlic and cilantro in a food processor. Pulse for 15-30 seconds until chopped and well combined. Pour mixture into a small bowl. Stir in garlic and basil olive oil, 1/8 teaspoon salt and 1/4 teaspoon black pepper (more to taste). Cover and set aside. May be refrigerated up to one week. *Note: If you do not wish to pound chicken breasts, slice them horizontally 3/4 way through and lay flat to fill.
