Mashed Potato Kneidlach
2 cups mashed potatoes
1 teaspoon salt
2 eggs, slightly beaten
2/3 cup (about) Manischewitz® Matzo Meal
Add salt and eggs to cooled mashed potatoes and mix well. Add just enough matzo meal to hold mixture together. From into balls the size of walnuts. Drop into boiling salted water and cook 20 minutes. Drain well and spread with chicken fat (or spray them with vegetable spray). Brown in hot oven (400 degrees F).
