Golden Sweet Potato Tagine

1 tablespoon pure olive oil
2 cups shallots, finely chopped
1 teaspoon ground Garam Masala seasoning
2 garlic cloves, minced
1 pound skinless boneless chicken, cut into pieces
1 1/2 cups sweet potato, peeled and diced
8 pitted dried plums, chopped
1 tablespoon Manischewitz® Honey
2 1/2 cups Manischewitz® Reduced-Sodium Chicken Broth


Heat oil in a Dutch oven over medium heat. Add shallots cook 8 minutes or until golden, stirring occasionally. Stir in Garam Masala, garlic, chicken( cut into small pieces) and season with salt an pepper cook 1 minute, stirring constantly. Stir in broth, sweet potato, and dried plums bring to a boil. Cover, reduce heat to medium-low, and simmer 10-15 minutes or until sweet potato is tender. Gently stir in honey and cook 1- 2 minutes longer, Enjoy!
