Baked Chicken Broilers with Matzo-Nut Stuffing

Serves: 4-6    Contains Dairy


  • 1 cup minced onion
  • 1/2 cup diced celery
  • 1/2 cup coarsely chopped nuts
  • 6 tablespoons pareve margarine or chicken fat
  • 5 Manischewitz® Matzos, finely broken*
  • 1/2 teaspoon of salt
  • 1/8 teaspoon of pepper
  • 2 teaspoons paprika
  • 1 egg, slightly beaten
  • 1 cup Manischewitz® Chicken Consomme
  • 2 broiler chickens, split in half


Sauté onion, celery and nuts in 4T of fat until the onion is tender but not browned. Add broken matzos and toast lightly. Combine seasonings, egg and broth. Add to matzo mixture. Spread in large greased baking dish or roasting pan. Place broiler halves on top. Brush with remaining 2T of melted fat and sprinkle with salt and pepper. Bake in moderate oven (350 degrees F) 1 to 1 1/2 hours or until tender and golden brown.

*3/4 cups matzo farfel may be used instead.
